Ice Cream Sandwich

Yum, yum in your tum.  This is SOOO good! Life doesn’t get much better than an ice cream sandwich.  Especially when it’s totally healthy and guilt-free! The taste is so surreal.  Frozen bananas blend up into a creamy, smooth guilt-free ice cream, with hints of maple, walnuts, vanilla and cinnamon. Then the cold, soft, scrumptious goodness is sandwiched between two large, insanely delish, almond chocolate chip cookies… HEAVEN!

Ingredients for the banana walnut ice cream

  • 4 very ripe bananas, frozen
  • seeds from 1 vanilla bean pod
  • 1/2 tsp (2 mL) ground cinnamon
  • 1/4 cup (60 mL) crushed walnuts
  • 1 Tbsp (15 mL) maple syrup

Ingredients for the cookies:

  • 1 cup (250 mL) raw almond butter
  • 2 Tbsp (25 mL) ground chia (mixed with 1/3 cup/75 mL water)
  • 1/2 tsp (2 mL) cinnamon
  • 1/2 cup (125 mL) coconut sugar
  • pinch sea salt
  • 1 cup (250 mL) 100% rolled oats
  • 1 cup (250 mL) coconut flakes, unsweetened
  • 1/4 cup (60 mL) raisins
  • 1/4 cup (60 mL) cacao nibs
  • 1/4 cup (60 mL) chocolate chips
  • 1/3 cup (75 mL) walnuts, chopped/crushed 

To make the ice cream, blend frozen bananas, vanilla, and cinnamon. Transfer to a container and stir in walnuts and maple syrup. Keep in the freezer until needed.

Directions

Preheat oven to 350°F (175°C).

In a large bowl, mix almond butter, chia mixture, cinnamon, coconut sugar, and sea salt until well combined, then mix in remaining ingredients. You may want to get in there with your hands to make sure everything’s well combined and a dough-like consistency is formed.

Roll into larger balls in you hands, then press flat into 4-inch (10-cm) discs on a cookie sheet lined with parchment paper or greased with coconut oil. Smooth the tops and form into rounds.

Bake until golden, about 20 minutes. Let cool completely before eating.

To make the ice cream sandwich: 

Place one cookie on plate upside down, flat side facing up. Using an ice cream scooper, place one scoop on top of cookie, then press down using other cookie, forming a sandwich.
