Curried Quinoa Salad


This sweet and savoury quinoa salad makes the perfect meal or snack, will last unto 5 days in the fridge and gets better with time. PLUS, it freezes and thaws amazingly well! Freeze individual servings and by the time lunch rolls around, you have yourself an easy and delish on-the-go meal!

Salad Ingredients:

  • 3 cups cooked quinoa
  • 1 cup dried apricots, sliced
  • ½ cup toasted pumpkin seeds
  • 2 green onions, sliced
  • 1 cup fresh cilantro, roughly chopped
  • 1/2 cup raisins

Dressing Ingredients:

  • 3/4 cup olive oil
  • 1/3 cup rice or apple cider vinegar
  • 2 Tbs curry powder
  • 1 Tbs ground ginger
  • 1 tsp coconut sugar
  • salt and pepper to taste

Directions:

All all salad ingredients into a large bowl.  Whisk together the above dressing ingredients and drizzle over salad ingredients.  Refrigerate at least one hour or overnight.

    Hi there, I’m from Melbourne, Australia and am wondering what cilantro is. I also don’t think I can purchase green onions here. Are there substitutes? Thanks

      Cilantro is a leafy green herb, which also can go by ‘coriander’. It’s basically the green that grows from the coriander seed, and looks similar to flat leaf parsley (but doesn’t taste the same). Green onions are a variation of spring onions and scallions (it’s the long green part on top!) you can use chives… or you can just omit them all together!
